This recipe is one of my and our family’s favorites. I love it because it’s SUPER easy to make so I don’t have to slave away in the kitchen for days or even an hour. It tastes great and is good for you. I actually enjoy it on both summer and winter nights; because of the fresh ingredients it works for both.
Ingredients
2 Cooked Chicken Breasts
1 Tablespoon Olive Oil
2-5 Garlic Cloves – Diced
1 1/2 Cups green onions – Sliced
1 tomato chopped or one can of diced stewed tomatoes
1/8 – 1/4 Teaspoon Cumin
45 oz chicken stock
Salt to taste
1-2 Avocados Diced
1 lime – cut into wedges
Cilantro

A note on the cooked chicken breasts… I usually buy an organic rotiserrie chicken and pull the breasts off & save the rest for another dinner. It’s the easiest way to make this soup. You can also buy chicken breasts and cook them prior to making the soup BUT in my opinion it adds nothing to the flavor and just adds time. Do what makes you happy.

Grab a soup pot and heat up your olive oil & add the garlic. Cook for 30 seconds to a minute, just until you can smell the aroma. Make sure not to burn your garlic. That’s the WORST.

Add in the green onion and sauté for a few minutes longer. Once your green onions are soft add in the tomatoes and cook for a minute or two longer.

Now just add in the diced cooked chicken, stock, cumin & salt

You’ll want to let this cook for at least 10 minutes to warm it up but I usually give it 20-30 minutes for all the flavors to meld

Once the soup is done, serve with avocados, cilantro & lime wedges. Let everyone dish it up as they like it.
