Double Chocolate Energy Balls

I had a hard time deciding what to call these little bits of joy.  Protein Balls or Energy Balls??  I decided to go with Energy Balls because they have more carbs than my other version.  I decided to call those Protein Balls.  So whatever you are looking for, you’ll find it here.  

As long as you like chocolate & almond/peanut butter you’re in the right place!  These taste like Buck Eyes to me but they are way better for you & easier to make.  Oh and I may have left the best for last….  There’s only FIVE ingredients & they are No Bake.  So let’s get to it!


Double Chocolate Energy Balls

Chocolate Protein – 1 Cup — Here’s a link to the one I LOVE

Almond or Peanut Butter – 1 Cup

Coconut Nectar, Honey or Agave Nectar – 1/2 Cup

73% Dark Chocolate Chunks – 1/2 Cup

Chia Seeds – 1/4 Cup

 

  1. If you are using a “natural” nut butter that separates (which I would recommend for health reasons), I recommend mixing your nut butter so it’s back to a homogeneous mixture before measuring. i.e. no dry spots and no oily spots

  2. The easiest way to do this is to put all the ingredients except the chocolate chunks in a food processor and mix until fully blended.

  3. Once blended, add the chocolate chunks and pulse until barely mixed. There should still be chunks.

  4. Once mixed, I use a tablespoon cookie scoop (here’s one I love) to make the mixture into balls & pop them onto a parchment paper lined cookie sheet. If you don’t have a cookie scoop just use a spoon & roll them into balls.

  5. I think they taste the best when they are cold so I store them in the freezer. Pop the whole cookie sheet into the freezer and once frozen you can store them in a container.
