Chimichurri Chicken is a go-to meal around here. I LOVE to make a BIG batch of Chimichurri sauce & freeze it in one cup portions. That way, if I have some chicken on hand, I can just marinate it for about 30 minutes to an hour and pop it on the grill. This makes weeknight and even weekend meals a breeze. This recipe is so good I even serve it when I have company over.
2-4 lbs of Chicken Thighs
Marinate Chicken Thighs in the Chimichurri Sauce for at least 30 minutes or up to 8 hours.
Once marinated, heat up the grill to at least 450 degrees.
Grill until done.
