I like this chili because it’s a change from my regular Five Bean Chili . It’s a bit sweet from the sweet potatoes but still really savory & satisfying. Chili is a big hit at my house so I like a little variety!
I have also used left-over chicken breasts from my Roast Chickens to make this an even easier weeknight meal.
Oh & this recipe is totally “clean” & has all the nutrients you need ALL in one bowl!
1 1/2 lbs Ground Turkey or Chicken Breasts
1/2 Cup Onion Chopped
3 Garlic Cloves Crushed
1 Can (15 oz) Fire Roasted Diced Tomatoes
1 Can (15 oz) Tomato Sauce
3/4 Cup Bone Broth or Stock
1/2 tsp Cumin
1/4 tsp Chili Powder
1/4 tsp Paprika
1 Bay Leaf
1 medium Sweet Potato peeled & diced into 1/4 inch dice
Optional Toppings:
Cilantro for Garnish
Avocado
Limes
-
If using the ground turkey, brown the turkey in a large pot.
-
Once the turkey is well browned, add the diced onion & garlic. Cook for 3 minutes
-
Add the canned tomatoes & sauce, sweet potatoes, bone broth/stock, spices & bay leaf. Remember to add salt to taste
-
Cover & simmer on low heat for about 30 minutes. You can add more bone broth/stock if you want it to be a little looser.
-
Enjoy with Cilantro, limes & avocados!
