I LOVE a good chicken salad. I love it so much that I have actually figured out the art of making a chicken salad. I say this because although I’m going to give you a recipe below, I can also give you a formula for making the BEST chicken or tuna salad with whatever you have on hand.
Here’s what you need –

Lean Meat (chicken or tuna)

A Healthy fat (“clean” mayo or avocado)

Something with a little zing (usually some sort of mustard)

Something with tang (lemon juice, lime juice or apple cider vinegar)

Some crunchy vegetable (celery or water chestnuts)
-
Onion (red, green onions, shallots or chives)
-
Chopped nuts
-
Something Sweet (Apples, dried cranberries or raisins)

An herb (parsley, cilantro or dill)
You just mix these together in any combination, add some salt to taste & you have a DELICIOUS salad.
One other note, I try to make everything about the same size so you get a good mixture of all the elements of the salad in your mouth. Keep it consistent! It makes a big difference.
I pop mine on top of a bed of greens and enjoy!
2 Cooked Chicken Breasts (I usually keep the breasts from a roast chicken to make the salad)
1/2 Cup chopped celery (super small dice – maybe 1/8 inch)
1/4 Cup chopped Red Onion (super small dice – maybe 1/8 inch)
1 Tablespoon Dijan or yellow mustard
1/2 Cup “Clean” Mayo
Juice of 1/2 lemon
Handful of your favorite herb chopped up (Parsley, Cilantro or Dill)
1/4 Cup Sliced Almonds

Throw everything in a bowl & mix well.

If it’s a bit too dry add some more mayo.

Last, if you want to make this SUPER clean, skip the mayo and go with a ripe avocado.
