I’m not sure why but I just LOVE snickerdoodles. I’m usually a chocolate person all the way, but snickerdoodles have my heart. That being said, I try to eat clean 80% of the time, so it’s not something I like to have on-hand. That’s how these protein balls came about. I was trying to make something a bit healthier that could also calm the craving for cookies! These protein balls totally fit the bill.
To Form the Balls:
Vanilla Protein – 1 Cup – Snag my favorite kind HERE
Almond or Peanut Butter – 1 Cup
Coconut Nectar, Honey or Agave Nectar – 1/2 Cup
Chia Seeds – 1/4 Cup
Cinnamon – 1 Tablespoon
For the Topping:
Coconut Sugar – 1/4 Cup
Cinnamon – 1 Tablespoon

Mix the fix five ingredients in a food processor until thoroughly mixed.

Form into balls. I usually do 1 Tablespoon size balls. I also LOVE my tablespoon cookie scoop. Snag one HERE.

Once the balls are all rolled, mix the topping in a ball & toss the balls in the topping. You can do a few balls at at time.
