I love this recipe & it’s not one that I normally would. It’s a bit different with spices I wouldn’t put together. That might be why I like it so much! It’s satisfying without having a lot of carbs & the whole family loves it.
It might sound a bit different…. but trust me on this, you will LOVE it!
1 1/2 lbs ground turkey
1 Tablespoon Olive Oil
2 Medium Zucchini, shredded or chopped
2 Medium Carrots, shredded or chopped
1 (15 ounce) cans tomato sauce, no sugar added
1 (28 ounce) can diced tomatoes
1/2 pound brown rice or quinoa pasta (Rotini or Penne)
1 Tablespoon Onion Powder
1 Tablespoon Garlic Powder
1 Tablespoon Ground Cumin
2 Cups Raw Spinach, Tightly Packed

Heat a large pot of salted water to cook the pasta. Once the water boils add the pasta and cook until al dente.

While the pot of water is heating up, cook the turkey in a large pan until browned

Add the zucchini, carrots, tomato sauce, diced tomatoes, onion powder, garlic powder & cumin

Once the zucchini & carrots are tender, add in the spinach & cooked pasta
