I’m not sure if you’ve noticed but I LOVE roasted veggies. There’s a couple different reasons why…. First, roasting gives your vegetables a deep rich taste. Second, they are so easy. You can just pop them in the oven and work on something else. Last, they are healthy!
My family absolutely LOVES Roasted Brussel Sprouts. I hope your family does too!
1 1/2 pounds Brussels sprouts
3 tablespoons good olive oil
3/4 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper

Preheat oven to 400º

First, you’re going to clean them up by cutting off the brown ends of the Brussels sprouts and pulling off any yellow outer leaves. Then, cut them in half lengthwise.

Line a baking sheet with aluminum foil & add your brussel sprouts, olive oil, salt & pepper

Mix them all around & the roast for 35 to 40 minutes, until crisp on the outside and tender on the inside. Shake the pan from time to time to brown the sprouts evenly.
