Oh my goodness! When I discovered Eggroll in a Bowl I was in heaven!
I love me some egg rolls & I never thought I could eat clean AND have them. So it’s now quite egg rolls, it’s missing the wrapping BUT it’s close enough. The recipe has tons of fresh veggies too so it’s all around good for you.
The other thing is it’s a one pan meal so you don’t have to dirty a ton of dishes. Score!!
1 – 1 1/2 lbs organic ground turkey or beef or a mixture of the two
1 bag coleslaw mix OR 1/2 a head of cabbage shredded & about a cup of shredded carrots
5 cloves garlic minced
1-2 inch piece ginger minced
1/2 cup coconut aminos
2 Tablespoons toasted sesame oil
For the Garnish:
Sliced green onions
Lime Wedges
Cilantro

Brown your meat of choice in a pan.

Add in garlic & ginger & sauté for about a minute

Add in cole slaw mix or cabbage & carrots. Cook until soft.

Add in sauces & serve with garnishes
