Sweet Potato Hash

I NEVER thought this was a recipe I would absolutely LOVE but I do! We prep a big recipe once a week now on Sundays & eat it with sunny-side-up eggs & as a side dish for lunches & dinners. I even add it to salads & casseroles.

It is so good and so versatile.

I’m sure your family will LOVE it as much as we do

2 Tablespoons Olive Oil

3 medium sweet potatoes, skin-on, diced into a small dice

1/2 medium white onion, diced

2 stalks celery diced

1 1/2 tsp sea salt

1/2 tsp garlic

2 cloves garlic, minced

1 inch piece fresh turmeric minced OR 1 tsp ground turmeric

  1. Heat the oil in a large pan on medium-high heat

  2. Add all the ingredients & stir to combine

  3. Cook, stirring occaisionally until the potatoes are soft but not mushy. It should be about 15-20 minutes.

  4. Serve hot OR save for another day.

  5. Enjoy!
