The inspiration for this salad came from one of my favorite restaurants Mad Greens. It’s a salad restaurant so saying it’s one of my favorite restaurants says a lot about me. It’s of course the Siam I am Salad.
The funny thing is I modify the heck out of this salad when I go there so I figured, instead of spending $12 on a salad, why not make a copycat version at home and save myself TONS of money. So here it is!!
Salad:
5 ounces Baby Spinach
5 ounces Baby Kale
1 Cup chopped Carrots (buy them this way – it will make your life/dinner so much easier)
1 Can chopped Artichoke hearts
1 Avocado, diced
3 Green Onions, sliced thin
1/4 cup Pumpkin seeds
2 Cooked Diced Chicken Breasts (purchase already cooked, use leftovers from a roast chicken OR cook them in the oven with some salt & lemon)
Dressing:
1 cup Chopped Carrots
1/2 inch piece fresh peeled Ginger
1/4 cup Toasted Sesame Oil
1/4 cup Coconut Aminos
1/4 cup Grapeseed Oil

For the salad just mix all the ingredients together in a large bowl.

For the dressing add all the ingredients to a blender or use a hand blender (that’s my preference)

Throw the dressing on top & toss the salad!
