Asparagus is so good for you BUT it’s an easy vegetable to overcook & it’s not always cheap.
That’s why I like roasting it. It’s really easy to overcook when you steam it! Also, the little burnt edges taste so good!
1 lb asparagus spears
Olive Oil
Salt & Pepper

Heat oven to 400º

Cut the bottoms off the asparagus. You need to cut off at least an inch BUT you might want to cut more. What I’ve heard is you take the asparagus & bend it until it breaks. That’s where you want to cut it below. Really, you just want to make sure you cut off the fibrous dry ends because those are NOT tasty.

Toss the asparagus spears with about 1-2 tablespoons olive oil, salt & pepper to taste on an insulated baking sheet.

They should take about 10-20 minutes to roast, but make sure to watch them. They can go from perfect to overdone in a minute. It also depends on the thickness of your spears. I like tiny little ones so they don’t take as long to roast.
