I had the idea to make these tacos because my husband kept making this ground turkey dish to take to lunch with him everyday. I’m not a big fan of eating ground meat all by itself but it was a good little mixture.
That’s when I thought…. THIS would be AMAZING as a taco!
And it turns out that yes, yes it did make an amazing taco…..
1/2 red onion sliced
1 cucumber, julienned
1/4-1/2 cup Apple Cider Vinegar (with-the-mother)
1 head boston lettuce
3 tablespoons Coconut Oil, divided
1 Onion, diced
1 pound Organic Ground Turkey
4 cloves Garlic, minced
2 teaspoons Chili Powder
½ teaspoon Salt, adjust to taste
½ teaspoon black pepper
1 can sliced water chestnuts, chopped

First, you want to pickle the red onion & cucumbers. Add them to two separate bowls & cover them with the vinegar. Let them sit until you are ready to eat.

Clean the lettuce and pull the leaves apart. These will be your “taco shells”

Add 2 tablespoons of coconut oil to a skillet set to medium-high.

Add the onion and sauté until they are soft.

Add the ground turkey & spices. Cook thoroughly

Once the meat is fully cooked add in the chopped water chestnuts

Now you have all the pieces, just put together your tacos & enjoy!
