I was first introduced to the recipe after I had my third child. My sister brought us dinner & this was it.
Since then it has been my go-to “new mom” dinner. I love it because it’s super easy to make, I can share the recipe, you can make it ahead of time & leave it in the fridge or freezer & just pop it in the oven, on the stove-top or on the grill when you are ready.
Everything about it is easy-peasy…. oh and it’s super yummy too!
2 lbs Skinless Chicken thighs or breasts
1/2 Cup Dijan Mustard
1/4 Cup REAL Maple Syrup
1 Tablespoon Rice Wine Vinegar or Apple Cider Vinegar (with-the-mother)

If using the oven preheat it to 400º, if using the grill preheat it too!

Mix the mustard, maple syrup & vinegar together in a big bowl.

Add the chicken in to let it marinate.

If you are cooking it in the oven, you can place the entire mixture in a casserole dish in the oven right away. If not, let it marinate for at least 15 minutes up to a day. You can also freeze it at this point to use another day.

If you’re cooking it on the grill (this is my favorite way to cook it), place it on a preheat grill & turn over after 7 minutes. Let it cook for about another 5-7 minutes on the second side & check for doneness. If it’s still not done let it cook for about 3 minutes on each side until it is!
