You have to know that I’m not much into chicken breast BUT I know that it’s a healthy & lean protein so I try to incorporate it as much as possible.
All that being said, this dish was AMAZING. And I have to give props to my husband. He’s a total grill master. He grilled these breasts & they weren’t dry or overcooked. They were perfectly juicy & yummy. I wrote down EXACTLY how he did it so you can do it too!
Chicken
4 Organic Chicken Breasts
2 Limes zested & juiced
1/4 Cup Olive Oil
1/3 Cup Chopped Cilantro
3 Cloves Garlic, minced
Salt & Pepper to taste
Salsa
1 1/2 medium avocados, diced
1/2 Cup Cherry Tomatoes, halved
1/2 Cup Red Onion, diced small
1 Clove Garlic
1 Tablespoon Fresh Lime Juice

In a baking dish, mix together all ingredients for the chicken except the breasts.

Add the chicken breasts & marinate for 15 minutes up to 4 hours.

Preheat the grill to around 450º. Grill the chicken for about 7 minutes a side. You can use a meat thermometer until the meat is at 160-165 degrees.

Once done, let rest for about 5 minutes

While the chicken is cooking, mix together all the ingredients for the salsa.

Serve the chicken with the salsa on top.
