I fell in love with Zucchini Fritters when I had massive amounts of zucchinis coming out of my garden. I HAD to find something to do with them.
They are refreshing & an awesome change from the norm.
Fritters:
5 Cups Shredded & Squeezed Zucchini
1 Cup of Egg Whites
6 oz Feta Cheese
1 small Clove Garlic
2 green onions sliced thin
1/2 teaspoon Salt
Tzatziki Sauce:
1 Cup Greek Yogurt – My Favorite is Fage
1 lemon, zested
1/2 lemon, juiced
2 Tablespoons fresh Dill
2 Garlic Cloves, finely diced
1 small English Cucumber, seeds removed & diced small
Salt to taste

Preheat oven to 350º & line a couple baking sheets with parchment.

One BIG piece of advice I can give you is you want to get as much of the liquid as you can out of the zucchini. To do this, put your shredded zucchini in a tea towel & squeeze it will ALL your muscles until you can’t get anymore liquid out. Sometimes I have my husband help me with this…. LOL!

Combine all your ingredients for the fritters into a bowl.

Once combined, use a 1/3 measuring cup to make the fritters.

Pop in the oven and bake for about 15-20 minutes until starting to turn golden brown.

While the fritters are baking, combine all the ingredients for the Tzatziki.

Serve Fritters warm with the Tzatziki Sauce & enjoy!
