This pesto was so good, I might like it even better than traditional pesto. Is that sacrilegious to say?
The flavors are super fresh & vibrant. Besides that it’s vegan & totally clean.
You can use this as a base for a pasta salad, a fresh vegetable salad, to add as a topping to chicken or fish, or as a condiment for a sandwich.
You pick how you want to use it but know that this is enough for two full meals so plan accordingly!
1 Cup Fresh Mint Leaves
1 Cup Fresh Basil leaves
2 Cloves Garlic
1 Green Onion
1/4 Cup Walnuts
Lemon, zested & juiced
5 Tablespoons Olive Oil
1/4 teaspoon Kosher Salt
1/4 teaspoon Aleppo pepper (optional)
This is so simple you don’t even need directions but I will give them to you anyways…..
- Pop everything in a food processor & blend. If it’s a bit too thick you can add some more olive oil.
- Serve over pasta, a vegetable salad, cooked fish or chicken.
