I grew up in a Lebanese household & one of the things I remember fondly is eating a tomato & feta salad. We would douse it in olive oil & eat it with pita bread. Yum!
It was a simple & easy meal that we would often eat. I was craving it BUT I didn’t want to add all that olive oil & I was trying to figure out how to add some protein without adding some protein…. in comes quinoa pasta! Genius!!

2 Cups Dry Quinoa Pasta, cooked & cooled
2 Cups Cherry tomatoes (or whatever you have on hand), chopped or sliced in half
1/4 Cup Fresh Parsley, chopped
6 ounces Feta
1 Lemon, juiced & zested
2 Tablespoons Olive Oil
- This is super simple all you need to do is cook your pasta, drain it & rinse it in cold water to cool it down.
- Place all the other ingredients in a large bowl & mix together with the pasta.
- Enjoy!
