This recipe actually came out of necessity. My husband loves kale & he planted a bit too much so I had to find something to do with it.
I also had some berries on hand that surprisingly hadn’t been eaten all up by my three girls. So I decided to put them all together & it actually turned our really good.
One huge tip I have with any kale salad is you have to massage the dressing into the kale & always dress it ahead of time so it wilts the leaves. Kale leaves are hearty so they can stand up to the acid without over-wilting.
6-8 Cups Kale
2 Cups Berries of your choice (I did sliced strawberries & blueberries)
1/3 Cup Feta Cheese Crumbles
2-4 Tablespoons Olive Oil
1-2 Tablespoons Balsamic Vinegar (a really good one like this one)
Kosher Salt to taste
- Add the kale leaves to a big bowl & add the olive oil & vinegar. Start with less & add more as needed.
- Massage the leaves & give your salad a taste. If it needs more dressing go for it.
- Add the berries & cheese on top before serving.
- Enjoy!
