This recipe came out of necessity BUT was so good I couldn’t stop eating it.
It’s definitely just as good as regular pesto if not better. Eat it with pasta, in sandwiches or in the Pesto Stuffed Pork Loin.
Whatever you do, make sure to double the recipe because it goes quick.
2 1/2 cups Fresh Basil Leaves
2/12 cups Fresh Italian Parsley (1 bunch)
1/4 cup Pistachios
1/4 cup Pecans
5 cloves Garlic
1 cup Olive Oil
1 tablespoon Fresh Squeezed Lemon Juice
- Pop all the ingredients in a food processor or blender & mix until combined well.
- Enjoy on whatever you please!
