Lemon Dill Green Bean Salad

Lemon & dill are two of my favorite flavors & I happen to love green beans too.

If I do say so myself, this salad is yummy & fresh.  It’s a good one to make a bunch of and serve throughout the week because the green beans can stand up to the dressing.

I love to double it and eat it throughout the week.

1 pound green beans, trimmed (I love the ones from Costco)

4 teaspoons chopped fresh dill

1 small clove garlic, minced

1 tablespoon olive oil

1 lemon, zested & juiced

1 teaspoon whole-grain mustard

1/4 teaspoon salt

  1.  Blanch the green beans & use a ice bath to cool them down immediately.
  2. Dry off the beans
  3. Mix all the rest of the ingredients together in a salad bowl.
  4. Add your beans & let sit for 10-30 minutes.
  5. Enjoy!
