Five Ingredient Coconut Curry

Simple & Easy.

Isn’t that what we are ALL looking for when it comes to weeknight meals?

This is a “Dump Dinner”.  Meaning you literally dump everything into a pot, cook & voila, dinner is served!

What’s even better about this dish is it is also totally clean and vegetarian.  Although, I’m not a vegetarian, I like to take a break from meat too!

1 can Coconut Milk

2 Tablespoons Red Curry Paste

10 ounces Butternut Squash, diced

1 Can Chickpeas, drained & washed

1 Clove Garlic, Minced

  1.  Pop all the ingredients into a medium saucepan.  Cook on medium heat until the squash is heated through & the chickpeas are tender.
  2. Serve with rice or riced cauliflower.
  3. Enjoy!
