I’ve been so into making cream soups lately because they are so darn easy & yummy.
Not gonna lie, one thing that makes them super easy to make is my Vitamix blender. If you don’t have one, I highly recommend getting one.
3 tablespoons olive oil
1 small yellow onion ,finely chopped (about 1 cup)
2 cups very finely chopped good quality flavorful celery (about 5 large ribs, organic recommended for optimal flavor).
1 large clove garlic ,minced
1 1/2 cups bone broth or good quality chicken broth
1 can coconut milk
1 teaspoon salt
1/8 teaspoon freshly ground pepper

Heat the oil in a Dutch oven over medium-high heat and cook the onions, celery and garlic until soft and translucent, 5-7 minutes.

Add the bone broth and coconut milk and stir until the mixture is smooth. Increase the heat and bring it to a simmer. Reduce the heat to medium, add the remaining ingredients, and simmer, uncovered, for 15 minutes. Add salt to taste.
- Add the soup to a blender or use an immersion blender to blend it & turn it into a nice cream soup.
