This recipe totally came out of necessity.
We had tons of celery coming out of the garden & what I didn’t realize is when you grow celery, you get tons of celery leaves. The celery you get from the store is the middle of the plant. I’m not sure what they do with all the celery leaves or small stems when you buy it from the store but my guess is it turns into cream of celery soup.
All that to say, I have a philosophy of waste not, want not so I had to find something to do with the leaves. Since I absolutely love pesto. That’s what it became! And I was surprised at how good it turned out.
2 garlic cloves
1/2 cup pecans
3 cups celery leaves loosely packed
3/4 cup olive oil
1/4 teaspoon salt more to taste
1/2 tablespoon lemon juice
- Blend all ingredients in a food processor until well combined.
- Enjoy on pasta, toast, a sandwich or as a condiment.
