Cilantro Lime Beans & Rice

Some nights I just need to get dinner on the table & it needs to be simple BUT also be satisfying & taste good.

This dish came from a night where I was feeling like that.  It’s almost a dump dinner… almost.


2 cups cooked brown rice

2 cans pinto or black beans, drained & rinsed

1/2 bunch cilantro, chopped

2 limes, juiced

1-2 red, yellow or orange bell peppers chopped

  1.  Cook rice according to package directions.
  2. Add the rice to a pot along with the beans, peppers & the lime juice to heat everything through.
  3. Add salt & cilantro to taste.
  4. Enjoy!
